Prepare a classic tuna tartare and season it with salt, pepper, marjoram, orange zest, extra virgin olive oil, balsamic vinegar, honey and soy sauce.
Cut slices of bread very thin with the aid of the meat slicer, brush them lightly with oil and dehydrate them in the microwave or in the oven at 180°C for about 3 minutes.
Add the passion fruit topping to the mayonnaise and mix well.
Dress the salad with the semi-dried yellow cherry tomatoes, oil, salt and pepper.
Arrange the tartare in the centre of the serving dish with the aid of a pastry cutter and garnish with the crispy bread and salad.
Dress and garnish the dish with the passion fruit mayonnaise.
